Julia Drake

Julia Drake has been a part of the team here at Kendal-Crosslands Communities for over two years. She has brought her infectious, cheery sense of adventure with her. Julia grew up in nearby West Chester and went to West Chester University, and now lives in Kennett Square.

Julia was drawn to Kendal-Crosslands Communities by the beauty of the campus and the strong Quaker-based values that foster independence and environmental stewardship. “Did you know that the newer cottages at Kendal at Longwood are LEED-certified? I love the fact that as we’re looking to expand the living options here on campus, building in an environmentally friendly and sustainable way are key factors in every decision. We already have a couple of charging stations for electric cars, and are considering adding others to campus.”

Julia and her fiance are renovating one of the great Victorian-style twins in Kennett Square themselves, giving Julia even more appreciation for all the decisions and work goes into the process when residents are getting ready to move into the community.  “During the pandemic all we had was a microwave and an electric skillet seeing as our entire kitchen was backordered! I truly bonded with the residents waiting for their new home to be ready here on campus during that time- it’s exciting seeing the evolution of the renovation process!”

When she’s not working, Julia keeps active on her days off. She loves antique markets, cooking from scratch, creating recipes, and weekend trips to Sea Isle City & Cape May. “That’s one of the great things about living in this area- you can be at the beach in about 90 minutes- in New Jersey or Delaware, or in the Poconos. It’s just a little longer by car or train to get to New York City or Washington, DC.”

Julia loves walking around campus, and seeing how much residents take advantage of the over 7 miles of trails and paved walkways that take you through the natural beauty of campus. “Everyone is always smiling and it’s clear they feel very much at home. This is a special community and I am so glad to be a part of it.”

Julia’s Clean Eating Egg Frittata Recipe

Ingredients

  • 2 tbsp olive oil
  • 1 500mL carton egg whites
  • 1 cup cherry tomatoes, sliced in half
  • 1 cup mushrooms, chopped
  • 1 cup baby spinach, chopped
  • 1/2 tsp each Salt & pepper

Instructions

1. Preheat oven to 400 F. Grease a large shallow round baking dish/cake pan with olive oil, making sure to grease the sides well. Add remaining ingredients, stirring well and gently with a fork.

2.  Place baking dish on top of a baking sheet lined with parchment paper just in case a bit of the oil rises above the egg white mixture (optional, but I do this to avoid grease dripping down into the oven as the egg whites rise and cook).

3.   Bake in the oven for 30-35 minutes until egg whites are firmly set. Remove from oven and slice into 4-5 pieces when cooled.
